Enchiladas

Meat sauce ingredients:

1 lb. ground beef;   1 diced onion
3 cloves diced garlic;    1 diced bell pepper
4 lb. tomato sauce;    1 lb. tomato paste
1/2 C. wine;    1 T. Worcestershire sauce
1 t. cayenne;    1 t. Tabasco sauce
1 t. salt;    1/4 t. pepper


Lettuce-Cheese mixture:

1 head iceberg lettuce thinly sliced
1 lb. grated cheese (cheddar, jack, or mix)
1 diced onion

Beans and Tortillas:

2 cans (2 lb. size) kidney beans
12 corn tortillas

Cook up the meat sauce and simmer an hour.   Mix up the lettuce-cheese
mixture in a big bowl.   Heat the beans in a sauce pan on the stove or
in the microwave.   Fry the tortillas flat, drain and pat dry of oil.
On each of four plates, place the following layers:   a dab of sauce,
tortilla, beans, tortilla, lettuce-cheese, tortilla, and cover with
sauce.
